Winter radish carpaccio

A minimalist, plant-based plate! The winter radishes offer a subtle palette of flavours and colours. The flowers add an aesthetic and gustatory touch.

Ingredients

2 Radish Read Meat

1 Beetroot chiogga

1 Golden ball turnip

Some edible flowers: borage, pansy...

Guérande salt

Pepper

Elixir or L’Oli olive oil

Preparation

Wash root vegetables

Slice into strips using a mandolin

Arrange the slices on the plate

Decorate with the flowers using a pair of tongs

Gently add the olive oil

Add salt at the last moment and serve.
